Hello, in our Tea Time today we again enjoy a tea from Taiwan: Dong Ding Oloong.
This tea is one of the best known in Taiwan, being an oolong of the so-called “high” or “high mountain”, “Gao Shan Cha” in Chinese. In fact it is one of the most prestigious teas in Taiwan, along with the Alishan variety.
The leaves have the typical form of oolong tea, large sized. The aroma is soft, and a bit discreet for what we will discover below.
We will prepare this oolong tea (also called blue tea here in Europe) using about 3-4 grams of tea for a small teapot. Next we will add water almost to the boiling point, at about 90ºC, and let the infusion take about 4-5 minutes.
The opened leaves are large and whole, showing the typical “two leaves and a stem” sign of a quality tea.
Well, here comes the surprise. When making the infusion this tea begins to release a really powerful but very pleasant toasted aroma. This aroma is very reminiscent of varieties of Chinese origin such as Da Hong Bao, one of the “China Famous teas”. Even so, the color has nothing to do, being of a green pulling to dark.
The taste, very in tune with its aroma, is very pleasant. It has smoky touches, which make it dense and with many shades. The taste it leaves in the mouth is very pleasant. In short, a very elegant great tea.
