Hi. Today in our tea session we are ready to enjoy a green tea not well known here, but really interesting: Bai Mao Huo, also known as White Monkey in Europe. Bai Mao Huo White Monkey comes from Fujian Province, one of the most prestigious areas in China and internationally in terms of tea cultivation. It has a strong herb scent, with a lot of presence to be a green tea, and with a really interesting freshness.
For this occasion we use a typical porcelain Gaiwan in China. We prepare the infusion using about three grams of tea, adding water to about 75 degrees, and letting the infusion for a couple of minutes or so, so we do not bitter. Once the infusion is started the Gaiwan gives off a very pleasant aroma to green, and we begin to understand that although it is not well known Bai Mao Huo is a good quality tea. Once infused the leaf shows itself large and elongated, including some imperial picking: two leaves and a stem, a signal that this is a selected hand-picked leaf tea.
The color of the infusion is a nice clear amber, also clean, due that the leaves are fresh and of quality. The taste is fresh, with slight fruity touches, and haslonglasting tasete once infused. This Bai Mao Huo has very good flavor and aroma that leaves a taste in the mouth really pleasant and durable. The bitter touch typical of green teas is almost non-existent in this tea. This Bai Mao Huo White Monkey is perfect to make the dessert after a good meal, since it helps to leave the mouth fresh and to have a lighter digestion.
Definitively, a great discovery and a good choice to try new varieties not so famous as Longjing or Liu An Gua Pian. Without being so famous does not disappoint at all. That is all for today.
