Today in our Tea Time we enjoy another variety of white tea, in this case well known in Europe: Bai Hao Yin Zhen. Also known as “silver needle” or “white tea silver needle” this Chinese white tea comes from the province of Fujian.
The first reaction to the aroma before infusioning is very good. It has a fresh aroma, which reminds forest. In fact white tea is one that has more antioxidants, due to its ellaboration process in which the oxidation is minimal. The leaves are elongated, green with white trims, which give its name “silver needles”.
We prepare it with water at a moderate temperature, letting it rest for a while after reaching the boiling point, and infusing for about 3 minutes.
The infusion color is pale, clearer that other types of tea. The flavor is subtle, very soft, which leaves a pleasant taste in the mouth and with a little hint of bitterness. Bai Hao Yin Zhen is a very elegant tea, without artifice, and you really feel great because of its low amount of caffeine.
Definitively, Bai Hao Yin Zhen is a tea to enjoy with care, sharpening senses, with a great reputation among tea lovers.
