Now that we’re in the final stretch of this winter, and the sun does not just heat so much, today we will dedicate our Tea Time to a variety of black tea very typical in China: Qimen.

Originally from Anhui province, this tea is very famous and recognized, one from the standard in China as far as this variety of black tea is concerned. Here in Europe it is known as “Keemun Congou”.

The aroma of this tea is dense, with great presence. The leave’s size is small, dark brown. Small strips shaped, hence the name “Keemun Gongfu” or “Congou” which means that has been done with careful skill (“gongfu”) to produce thin strips tight without breaking the leaves.

We prepare the infusion with water at low temperature (about 45º) leaving it for about 4 minutes. The aroma of once infused still very strong and the color is brown with reddish tints.

Taste wise, we have a very nice tea. Very noble, with a little bitter taste and aftertaste in the mouth with a lot of presence.

Due to the properties of black tea, this Qimen is a good choice to start the day the best way as possible.
