Hi. Today in our tea session we enjoyed the variety called Taiwan Lao Cha.
Its name, which literally means “old tea of Taiwan”, is due to its elaboration process, which makes this a very toasted tea. This is evident not only in the color of the leaf, but also in its aroma, denser and deeper than the standard oolong tea varieties.
We prepare the infusion using a traditional clay Yixing teapot. We add about three grams of tea, and then we add water at about 90 degrees. The infusion time will be about three minutes, approximately.
When adding the hot water the leaf begins to give off a more intense aroma, with many typical details of the smoked tea varieties. Once ready, we went to enjoy our first cup of this Taiwan Lao Cha.
The color is a pale ocher, and the flavor is in line with its aroma. Dense, with many nuances and with a broad, lasting and pleasant aftertaste.
The leaves, which hold very well the water being added several times, are whole, and right away they only partially open.
In short, an example of the differences between oolong tea varieties, depending on the smoking / roasting process. This Taiwan Lao Cha is possibly one of the most toasted varieties, and that is very noticeable in the flavor and aroma, which abandons the floral nuances of varieties such as Ali Shan, and approaches varieties such as the Chinese Da Hong Bao, with the that maintains some similarities in the process and in the final result. A highly recommended tea, and more now that temperatures begin to drop.
