Hello. Now that we are in summer, why not enjoy a good iced tea? Here is a super simple recipe based on black tea, honey and lemon.

First we make an infusion with about 5 grams of black tea, in our case Lapsang Souchong. We add water at about 80 degrees and make an infusion of about 3 minutes.

Once infused, add the tea to a jug, using a filter to make it very clean and prevent it from tasting too bitter by accumulating leaves.

In this case we have added the infusion of two teapots. Then we add the juice of 1 lemon and honey to taste.

Let stand for a few minutes and then stir so that all the ingredients are well integrated. The trick to this recipe is to make it while it’s still hot, so the flavor will be much better.

We let it rest for a few more minutes and we have it ready to serve it in a glass with ice.

The final color is a light amber, and the flavor is great. Black tea gives it personality, honey a dense and sweet nuance, and lemon enhances both flavors by adding a touch of citrus.

And you can leave it in the fridge for the next day without problem.
