Hello. Today we enjoy a variety of white tea in our tea session: Bai Hao Yin Zhen selection.

This variety of white tea comes from the Chinese region of Fujian, and is better known in Europe by the name “Agujas de plata” or “Silver Needles” in English.

The leaves are tender to the touch, sharp, elongated and pointed. The shade of color in its leaves ranges from a lighter green tone to a darker one, predominantly a light pale tone, which is precisely what gives it its name.

Right off the bat, the aroma is moderate and smooth, which without much presence is sober and pleasant.

We prepare the infusion using a traditional Gong Fu game made up of a Gaiwan, filter and Gu Bei or “cup of justice”. We add the tea and water at about 80 degrees and start the process of “washing the leaf.”

Washing the leaf means that we discard the water at the same time that we add it to the tea. This allows us to warm the water for the following infusions, as well as allowing the leaf to release surface impurities and the utensils to warm up.

Once the leaf has been washed, we proceed to make the first infusion. The scent of this Bai Hao Yin Zhen awakens and begins to fill the room. We filter the infusion to add it to the Gu Bei, leaving a soft pale ocher infusion ready to be enjoyed.

As a detail, once infused the leaves remain whole, a sign of quality.

Moving on to the flavor of this white tea, it is very balanced, with a slight floral touch, as well as a very slight astringent touch to give it personality and harmony, both in the flavor and in the aftertaste it leaves.

This Bai Hao Yin Zhen selection is a tea that goes from less to more, beginning in a subtle way at first sight and aroma, to finish with a very good taste in the mouth. Without a doubt, at the height of the great reputation that Fujian white teas have in China, recognized and acclaimed internationally. A necessary tea for tea lovers, in order to have a global vision starting from the top of the bar.
