Hello. Today we enjoy a mango oolong tea recipe, served very cold.
In this case we use a variety of toasted Tie Guan Yin oolong tea, and we will start by making an infusion in a porcelain teapot, adding about 5 grams of tea and water at about 80 degrees.
Once this first infusion is ready, we pour it into a jug, using a strainer. In this way we prevent leaves from slipping into the jar that can alter the flavor.
And now we go on to prepare the second infusion, adding water again in the teapot. While it is infusing, add the already peeled and cut mango to the jar. We do all this while hot, so that the fruit can better bring out its flavor and integrate with the tea.
The second infusion is ready, we pass it to the jug using the strainer again, and then we stir everything very well.
Now we have our mango tea ready to serve. We will use a glass with ice to serve it very cool and that the aromas and flavors are further enhanced.
In this case, tea and mango are two ingredients with a lot of personality, but they complement each other perfectly. The flavor is dense, with a lot of presence and leaves a pleasant and long-lasting aftertaste. Very good, and it can be left in the fridge overnight so that the fruit settles even more. A perfect tea to quench your thirst and refresh yourself.
