Hello. Today we enjoy a white tea with mint, served with ice.

The first thing we do is prepare the infusion. In this case we use about 5 grams of Bai Hao Yin Zhen white tea. Add the tea and water at about 80 degrees, to make a first short infusion, approximately 2 minutes.

Once the first teapot is ready, we add the infusion to a jug using a strainer, so that the tea leaves do not escape. Next, we add water to the teapot again to make the second infusion of tea, and while it is brewing we add the fresh mint leaves, to taste.

Once the second infusion of tea is prepared, we add it to the jug and stir so that the mint leaves release their flavor. We do this with hot water, so that the flavors and aromas of white tea and mint are integrated.

Well, we let it cool down, and then we can add it to a glass with ice. We can take advantage of a mint leaf to add it to the glass as decoration.

And we already have it, a tea with a very fresh aroma and flavor, with a balance of white tea that adds a slight bitterness. Delicious and refreshing in equal measure.

  • 800 ml. of water
  • Fresh mint (to taste)
